Why Use Dried Pomegranate
One crate of 10 kg of pomegranate reduces to approximately 1 kg after drying.
Due to volume reduction, the space required for storage is significantly reduced. The required volume is reduced to approximately 1/10th compared to the fresh product.
Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh pomegranate can fit into a 2-pallet area once dried.
Cold storage conditions are not required for storage. A cool, dry place away from direct sunlight is sufficient for dried pomegranate storage conditions.
The growth rate of bacteria is proportional to the water content in the product. Since the water content of dried pomegranate drops from 90% to 10%, bacterial growth is limited in the product with reduced water activity. After the drying process, the shelf life of the product is much longer than that of the fresh product.
The historical development of dried products has generally occurred during periods of famine and war. Products like dried pomegranate are strategic products for Turkey due to their long shelf life and ease of transport in terms of sustainable food.

Dried pomegranate product varieties and production process:
Dried pomegranate is the dried form of fresh pomegranate. Pomegranate arils have a water content of approximately 80%. By removing the water, about 1 kg of dried pomegranate arils is obtained from 5 kg of fresh arils. Drying removes the water and leaves the essence of the product. Consequently, the nutritional values of dried pomegranate, especially mineral, protein, and carbohydrate ratios, are significantly concentrated.
