Dried Capia Pepper Granules
Comparison of Fresh Capia Pepper and Dried Capia Pepper Price per kg
How Much Waste: About 12 kg of fresh product is used to obtain 1 kg of dried capia pepper granules. (The ratio may vary with the type of fresh product, drying method, moisture level and production parameters.)
Dried product price per kg:
Advantages of Using Dried Capia Pepper
Approximately 1 kg of dried capia pepper, which fits into a small jar, is obtained by using 10-12 kg of fresh capia pepper.
Due to volume reduction, the space required for storage is significantly reduced. The required volume is reduced to approximately 1/12 compared to the fresh product.
Due to the reduction in volume and weight, it has become an easy-to-transport product. A 20-ton truckload of fresh capia pepper can fit into approximately 2 pallets in powder form.
It does not need to be kept in cold storage. Keeping it in a cool, dry, and dark place is sufficient for dried capia pepper storage conditions.
The growth rate of bacteria is proportional to the water content in dried capia pepper. Since the water content of capia pepper is reduced from 88% to 10% during drying, water activity decreases, and bacterial growth in dried capia pepper is limited. Limiting bacterial growth ensures a much longer shelf life.
As Kurucum Food, we continue to develop dried capia pepper products and production technologies in partnership with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies. Our projects related to dried capia pepper:

What is dried capia pepper?
We can answer the question of what dried capia pepper is as follows:
It is a product obtained by drying fresh capia pepper, which has concentrated nutritional values and a long shelf life. The water in the fresh capia pepper is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried capia pepper. What changes when fresh capia pepper is dried? Let's look at the ratios…
- Before the drying process, fresh capia pepper contains approximately 90-92% water.
- This water content is a suitable environment for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
- As a result of drying, the water in the fresh capia pepper is removed and the essence of the capia pepper remains.
- With the removal of water from the product, approximately 1 kg of dried capia pepper is obtained from 10-12 kg of fresh capia pepper.
- As a result, the shelf life is extended, and the nutritional values (protein, carbohydrates, minerals, fiber ratio) in the dried product increase due to the removal of the essence water.

How to store dried capia pepper?
Dried capia pepper has a minimum shelf life of 1 year when stored under suitable conditions. There are 3 main factors that reduce this period:
- Humidity
- Sunlight
- High temperature
To prevent the shelf life from shortening, it should be kept in its own packaging in a cool, dry environment away from sunlight.
