Advantages of Using Dried Broccoli
Using 11 kg of fresh broccoli, you get approximately 1 kg of dried broccoli that fits into a small jar.
Due to volume reduction, the space required for storage is significantly reduced. Broccoli powder is reduced to approximately 1/11th of its volume compared to fresh broccoli.
Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh broccoli can fit into about 2-3 pallets in powder form.
It does not require cold storage conditions. Keeping it in a cool, dry, and dark place is sufficient for dried broccoli storage conditions.
The growth rate of bacteria is proportional to the water content in dried broccoli. Since the water content of fresh broccoli drops from 90-91% to 10% during the drying process, water activity decreases, limiting bacterial growth in dried broccoli. Limiting bacterial growth ensures a much longer shelf life.
As Kurucum Food, we continue to develop technologies related to dried broccoli production in partnership with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies. Our projects related to dried broccoli:

What is Dried Broccoli?
Dried broccoli is the dried form of fresh broccoli processed through specialized systems. Broccoli contains approximately 90-92% water. Therefore, about 1 kg of dried broccoli is obtained from 11 kg of fresh broccoli during the drying process. During drying, the water in the fresh product is removed, leaving the essence of the product. For this reason, the nutritional values of dried broccoli, especially protein, carbohydrates, and mineral ratios, are highly concentrated.
We are the manufacturer of dried broccoli and offer various size options;

How to Store Dried Broccoli?
Dried broccoli has a minimum shelf life of 1 year when stored under suitable conditions. There are 3 main factors that reduce this period:
- Humidity
- Sunlight
- High temperature
To prevent a reduction in shelf life, it should be stored in its own packaging in a cool, dry environment away from direct sunlight.
