What Is Dried Carrot?
We can answer the question of what dried carrot is as follows:
It is a product obtained by drying fresh carrots, which has concentrated nutritional values and a long shelf life. The water in fresh carrots is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried carrot. What changes when fresh carrot is dried? Let's look at the ratios…
- Before the drying process, fresh carrot contains approximately 88% water.
- This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
- As a result of drying, the water in the fresh carrot is removed and the carrot essence remains.
- With the removal of water from the product, approximately 8-10 kg of fresh carrot yields 1 kg of dried carrot.
The drying process increases nutritional values by concentrating the carbohydrate and protein ratios in the dried carrot.Information:
In the production of dried carrot, maltodextrin (produced from starch) is added during drying to prevent the loss of beta-carotene. The loss of beneficial compounds that would otherwise disappear during the drying stage is reduced in this way.

Advantages of Using Dried Carrot

Using 8-10 kg of fresh carrots, approximately 1 kg of dried carrot is obtained, which fits into a small jar.
Due to volume reduction, the storage space required is significantly decreased. The required volume is reduced to about 1/10th of the fresh product.
It has become an easy-to-transport product due to weight and volume reduction. A 20-ton truckload of fresh carrots can fit into 2 pallets when dried.
It does not require cold storage. Keeping it in a cool, dry, and dark place is sufficient for dried carrot storage conditions.
The growth rate of bacteria is proportional to the water content in dried carrot. During the drying process, the water content of fresh carrots drops from 90% to 10%, lowering water activity and limiting bacterial growth. After drying, the shelf life of the product is much longer than the fresh version.
Historically, the development of dried products has often occurred during times of famine and war. Products like dried carrot are strategic for food security due to their long shelf life and ease of transport for sustainable food production.
As Kurucum Food, we continue to develop technologies related to dried carrot production in partnership with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies. Our projects related to dried carrot:
Carrot juice powder production
Carrot fiber production from carrot pulp
Production of carrot pulp using shock drying methods to minimize vitamin and beta-carotene loss
