What is Dried Celery?

Dried celery leaves are produced by drying fresh celery leaves. Before drying, fresh celery leaves contain approximately 90% water. Through the drying process, the water content of the fresh product is reduced to very low levels. As a result of drying, approximately 1 kg of celery leaves is obtained from 10-12 kg of fresh celery leaves. The drying process removes the water from the fresh product, leaving only the essence. Therefore, the nutritional values of dried celery leaves, especially protein, carbohydrates, minerals, and fiber, are highly concentrated.
We are the manufacturer of dried celery leaves and offer various size options:

Benefits of Celery Leaf Powder

Celery Leaf Usage Benefits

  • By using 10-12 kg of celery leaves, approximately 1 kg of celery leaf powder is obtained, which can fit into a small jar.

  • Due to volume reduction, the space required for storage is significantly decreased. The required volume is reduced to about 1/10-12 compared to the fresh product.

  • Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh celery leaves can fit into a 2-pallet space when dried.

  • It does not require cold storage conditions. Keeping it in a cool, dry place away from direct sunlight is sufficient for celery leaf powder storage conditions.

  • The growth rate of bacteria is proportional to the moisture content in dried celery leaves. During the drying process, the moisture content of fresh celery leaves drops from 91% to 10%, reducing water activity and limiting bacterial growth in the dried celery leaves. Limiting bacterial growth ensures a much longer shelf life.

  • Historically, the development of dried products has often occurred during periods of famine and war. Vegetable and fruit powders are strategic products for food security due to their long shelf life and ease of transport for sustainable food production.

  • As Kurucum Food, we continue to develop technologies related to the production of dried celery leaves in partnership with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies. Our projects regarding dried celery leaves:

How to Store Dried Celery?

Dried celery leaves have a minimum shelf life of 1 year when stored under appropriate conditions. There are 3 main factors that reduce this period:

  • Humidity
  • Sunlight
  • High temperature

To prevent a shortened shelf life, it should be kept in its own packaging in a cool, dry environment away from sunlight.
