Advantages of Using Dried Leek

Advantage of Using Dried Leek

  • Approximately 1 kg of dried leek, which can fit into a small jar, is obtained by using 10 kg of fresh leek.

  • Due to the reduction in volume, the space required for storage is significantly reduced. The required volume is reduced to about 1/10th compared to the fresh product.

  • Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh leek can fit into a 2-pallet space when dried.

  • It does not require cold storage conditions. Keeping it in a cool, dry, and dark place is sufficient for dried leek storage conditions.

  • The growth rate of bacteria is proportional to the water content in dried leek. Since the water content of fresh leek drops from 90% to 10% during the drying process, water activity decreases, and bacterial growth in dried leek is limited. Limiting bacterial growth ensures a much longer shelf life.

  • The historical development of dried products has generally occurred during periods of famine and war. Products like dried leek are strategic products for Turkey due to their long shelf life and ease of transport for sustainable food production.

  • As Kurucum Food, we continue to develop technologies related to dried leek production in partnership with our sister company, Eksis Industrial Drying Systems, which is a manufacturer of drying technologies. Our projects related to dried leek:

  • Leek juice powder production

What Is Dried Leek?

  • We can answer the question of what dried leek is as follows:
It is a product with concentrated nutritional values and a long shelf life, obtained by drying fresh leeks. The water in fresh leeks is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried leek.

  • What changes when fresh leek is dried? Let's look at the ratios...

    1. Before the drying process, fresh leek contains approximately 90% water.
    2. This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
    3. As a result of drying, the water in the fresh leek is removed, and the essence of the leek remains.
    4. With the removal of water from the product, approximately 1 kg of dried leek is obtained from 10 kg of fresh leek.
    5. As a result, shelf life is extended, and the nutritional values (protein, carbohydrates, minerals, fiber ratio) in the dried product increase due to the removal of the essence water.

How to Store Dried Leek?

Dried leek has a minimum shelf life of 1 year when stored under suitable conditions. There are 3 main factors that reduce this period:

  • Humidity
  • Sunlight
  • High temperature

To prevent the shelf life from shortening, it should be kept in its own packaging in a cool, dry environment away from sunlight.
