What Is Dried Radish?

  • We can answer the question of what dried radish is as follows:
It is a product obtained by drying fresh radishes, which has concentrated nutritional values and a long shelf life. The water in the fresh radish is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried radish.

  • What changes when fresh radish is dried? Let's look at the ratios…

    1. Before the drying process, fresh radish contains approximately 94% water.
    2. This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
    3. As a result of drying, the water in the fresh radish is removed, and the essence of the radish remains.
    4. With the removal of water from the product, approximately 1 kg of dried radish is obtained from 15 kg of fresh radish.
    5. As a result, the shelf life is extended, and the nutritional values (protein, carbohydrates, minerals, fiber ratio) in the dried product increase due to the removal of the essence water.

Advantages of Using Dried Radish

Advantage of using dried radish

  • Using a crate of 11 kg of radish, approximately 1 kg of radish powder is obtained, which can fit into a small jar.

  • Due to the reduction in volume, the space required for storage is greatly reduced. radish powder has decreased in volume by approximately 1/15 compared to fresh radish.

  • Due to the reduction in volume and weight, it has become an easy-to-ship product. A truckload of fresh radish powder can fit into approximately 2-3 pallets.

  • It does not require cold storage conditions. Keeping it in a cool, dry place away from direct sunlight is sufficient for radish powder storage conditions.

  • The growth rate of bacteria is proportional to the water content in dried radish. During the drying process, the water content of fresh radish drops from 92-93% to 10%, which lowers water activity and limits bacterial growth in dried radish. Limiting bacterial growth ensures a much longer shelf life.

How to Store Dried Radish?

Dried radish has a minimum shelf life of 1 year when stored under proper conditions. There are 3 main factors that reduce this period:

  • Humidity
  • Sunlight
  • High temperature

To prevent a shortened shelf life, it should be kept in its original packaging in a cool, dry environment away from sunlight.
