Advantages of Using Dried Spinach
Approximately 1 kg of dried spinach, which can fit into a small jar, is obtained by using 12 kg of fresh spinach.
Due to volume reduction, the space required for storage is significantly reduced. The required volume is reduced to approximately 1/12 compared to fresh spinach.
Due to volume and weight reduction, it has become an easy-to-transport product. A 20-ton truckload of fresh spinach can fit into an area of approximately 2 pallets in powder form.
It does not need to be kept in cold storage. Keeping it in a cool, dry place away from direct sunlight is sufficient for dried spinach storage conditions.
The growth rate of bacteria is proportional to the water content in dried spinach. Since the water content of fresh spinach drops from 88% to 10% during the drying process, water activity decreases, limiting bacterial growth in dried spinach. Limiting bacterial growth ensures a much longer shelf life.
As Kurucum Food, we continue to develop technologies related to dried spinach production in partnership with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies. Our projects related to dried spinach:

What is dried spinach?
We can answer the question of what dried spinach is as follows:
Dried spinach is a form of spinach with reduced water content, produced by drying fresh spinach under appropriate conditions. Dried spinach is a product with concentrated nutritional values and a long shelf life. The water in fresh spinach is evaporated, leaving the essence of the product. The resulting concentrated product, which has reduced water activity and bacterial growth potential, is called dried spinach. What changes when fresh spinach is dried? Let's look at the ratios…
- Before the drying process, fresh spinach contains approximately 91% water.
- This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
- As a result of drying, the water in fresh spinach is removed, and the essence of the spinach remains.
- With the removal of water from the product, approximately 1 kg of dried spinach is obtained from 12 kg of fresh spinach.
- As a result, the shelf life is extended, and the nutritional values (protein, carbohydrates, minerals, fiber ratio) in the dried product increase due to the removal of the essence water.

How to store dried spinach?
Dried spinach has a minimum shelf life of 1 year when stored under appropriate conditions. There are 3 main factors that reduce this period:
- Humidity
- Sunlight
- High temperature
To prevent the shelf life from shortening, it should be kept in its own packaging in a cool, dry environment away from sunlight.
