Advantages of Using Beetroot Powder

Illustration: a jar of beetroot powder equals a crate of fresh produce on a scale

  • Using 6-7 kg of beetroot from a crate, approximately 1 kg of beetroot powder is obtained, which can fit into a small jar.

  • Due to volume reduction, the space required for storage is significantly decreased. When compared to fresh beetroot, beetroot powder is reduced to approximately 1/6.5 of its original volume.

  • Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh beetroot can fit into approximately 2-3 pallets once turned into beetroot powder.

  • It does not require cold storage conditions. Keeping it in a cool, dry place away from direct sunlight is sufficient for beetroot powder storage conditions.

  • The growth rate of bacteria is proportional to the water content in dried beetroot. During the drying process, the water content of fresh beetroot drops from 85% to 10%, which lowers water activity and limits bacterial growth in the dried beetroot. After the drying process, the shelf life of the product is much longer compared to its fresh form.

  • As Kurucum Food, we continue to develop technologies related to dried beetroot production in partnership with our sister company, Eksis Industrial Drying Systems, which is a manufacturer of drying technologies. Our projects related to dried beetroot:

  • Beetroot juice powder production.

What Is Dried Beetroot Powder?

Beetroot powder – what it is and how it is made

  • We can answer the question of what beetroot powder is as follows:
It is a product obtained by drying fresh beetroot, which has concentrated nutritional values and a long shelf life. The water in the fresh beetroot is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried beetroot. After production, the dried beetroot is ground using special systems to become beetroot powder.

  • What changes when fresh beetroot is dried? Let's look at the ratios…

    1. Before the drying process, fresh beetroot contains approximately 87% water.
    2. This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
    3. As a result of drying, the water in the fresh beetroot is removed, and the essence of the beetroot remains.
    4. With the removal of water from the product, approximately 6-7 kg of fresh beetroot yields 1 kg of dried beetroot.
    5. As a result, the shelf life is extended, and the nutritional values (protein, carbohydrate, mineral, fiber ratio) in the dried product increase due to the removal of the water content.
