Advantages of Using Broccoli Powder

Illustration: a jar of broccoli powder equals a crate of fresh produce on a scale

  • From a crate of 11 kg of broccoli, about 1 kg of dried broccoli powder is obtained, small enough to fit in a jar.

  • Because the volume is reduced, the space needed for storage is much smaller. Compared with fresh broccoli, the volume of broccoli powder drops to about 1 in 11.

  • Thanks to the reduction in volume and weight, it becomes an easy product to transport. A truckload of fresh broccoli, once turned into broccoli powder, fits into an area of about 2-3 pallets.

  • It does not need to be kept in cold conditions. A cool, dry place away from sunlight is enough for the storage of broccoli powder.

  • The growth rate of bacteria is proportional to the water content of dried broccoli. Because drying lowers the water content of fresh broccoli from about 90-91% to about 10%, water activity falls and bacterial growth in the dried broccoli is limited. Limiting bacterial growth allows a much longer shelf life.

  • As Kurucum Food, together with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies, we continue to develop technologies for dried broccoli production. Our projects on dried broccoli:

  • Production of broccoli juice powder.

What is Broccoli Powder?

Broccoli powder – what it is and how it is made

Dried broccoli powder is the dried and ground form of fresh broccoli. Broccoli contains about 90-92% water. As a result of drying, about 1 kg of broccoli powder is obtained from about 11 kg of broccoli. During drying, the water in the fresh product is removed and the essence of the broccoli remains. As a result, the nutritional values of dried broccoli, especially the proportions of carbohydrates, minerals and protein, are much higher.

How is the dried broccoli powder we manufacture made?

Dried broccoli powder 0-1 mm: Fresh broccoli is dried after the necessary pre-treatments. The dried broccoli obtained after drying is ground with special crushing systems to produce broccoli powder.

How to Store Broccoli Powder?

Dried broccoli powder has a shelf life of at least 1 year when stored under suitable conditions. There are 3 main factors that shorten this period:

  • Humidity
  • Sunlight
  • High temperature

To prevent the shelf life from being shortened, it should be kept in its own packaging in a cool, dry place that does not receive sunlight.
