Fresh Beetroot vs. Beetroot Powder: Price per kg Comparison

Advantages of Using Beetroot Powder

Illustration: a jar of beetroot powder equals a crate of fresh produce on a scale

  • From a crate of 6-7 kg of beetroot, about 1 kg of dried beetroot powder is obtained, small enough to fit in a jar.

  • Because the volume is reduced, the space needed for storage is much smaller. Compared with fresh beetroot, the volume of beetroot powder drops to about 1 in 6.5.

  • Thanks to the reduction in volume and weight, it becomes an easy product to transport. A truckload of fresh beetroot, once turned into beetroot powder, fits into an area of about 2-3 pallets.

  • It does not need to be kept in cold conditions. A cool, dry place away from sunlight is enough for the storage of beetroot powder.

  • The growth rate of bacteria is proportional to the water content of dried beetroot. Because drying lowers the water content of fresh beetroot from about 85% to about 10%, water activity falls and bacterial growth in the dried beetroot is limited. After drying, the shelf life of the product is much longer than that of the fresh product.

  • As Kurucum Food, together with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies, we continue to develop technologies for dried beetroot production. Our projects on dried beetroot:

  • Production of red beetroot juice powder.

What is Dried Beetroot Powder?

Beetroot powder – what it is and how it is made

  • We can answer the question “what is beetroot powder?” as follows:
It is a nutrient-dense product with a long shelf life, obtained by drying fresh red beetroot. The water in fresh beetroot is evaporated and only the essence of the product remains. The resulting concentrated product, with lowered water activity and reduced potential for bacterial growth, is called dried beetroot. After production, dried beetroot is ground with special systems into beetroot powder.

  • What changes when fresh red beetroot is dried? Let’s look at the ratios…

    1. Before drying, fresh red beetroot contains about 87% water.
    2. This water content is an environment in which bacteria multiply quickly, and a moisture level at which the product cannot last for long.
    3. As a result of drying, the water in the fresh red beetroot is removed and the essence of the beetroot remains.
    4. With the removal of the water, about 1 kg of dried red beetroot is obtained from 6-7 kg of fresh red beetroot. The final product is crushed into beetroot powder form.
    5. As a result, the shelf life is extended, and because the juice is removed, the nutritional values in the dry product (protein, carbohydrates, minerals, fiber content) increase.

How to Store Beetroot Powder?

Dried beetroot powder has a shelf life of at least 1 year when stored under suitable conditions. There are 3 main factors that shorten this period:

  • Humidity
  • Sunlight
  • High temperature

To prevent the shelf life from being shortened, it should be kept in its own packaging in a cool, dry place that does not receive sunlight.
