Information:
In the production of dried carrots, maltodextrin (produced from starch) is added during the drying process to prevent the loss of beta-carotene. The loss of beneficial compounds that would otherwise disappear during the drying stage is reduced in this way.
What Is Dried Carrot Powder?

We can answer the question of what carrot powder is as follows:
It is a product obtained by drying fresh carrots, which has concentrated nutritional values and a long shelf life. The water in the fresh carrot is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried carrot. After production, the dried carrot is ground using special systems to become carrot powder. What changes when fresh carrots are dried? Let's look at the ratios…
- Before the drying process, fresh carrots contain approximately 88% water.
- This water ratio is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
- As a result of drying, the water in the fresh carrot is removed and the carrot essence remains.
- With the removal of water from the product, approximately 1 kg of carrot powder is obtained from 8-10 kg of fresh carrots.
The drying process concentrates the carbohydrate and protein ratios in dried carrot, increasing its nutritional value. Note:
During the production of dried carrot, maltodextrin (derived from starch) is added during drying to prevent the loss of beta-carotene. This reduces the loss of beneficial compounds that would otherwise be destroyed during the drying stage.

Usage Benefits

Using one crate of 8-10 kg of carrots, approximately 1 kg of carrot powder is obtained, which can fit into a small jar.
Due to the reduction in volume, the space required for storage is significantly decreased. The required volume is reduced to approximately 1/10th compared to fresh carrots.
Due to the reduction in volume and weight, it has become an easy-to-transport product. When a 20-ton truckload of fresh carrots is dried, it can fit into a space of 2 pallets.
It does not require cold storage conditions. Keeping it in a cool, dry place away from direct sunlight is sufficient for carrot powder storage conditions.
The growth rate of bacteria is proportional to the water content in dried carrot. During the drying process, the water content of fresh carrots drops from 90% to 10%, which lowers water activity and limits bacterial growth in the dried carrot. After the drying process, the shelf life of the product is much longer than that of the fresh version.
The historical development of dried products has generally occurred during periods of famine and war. Vegetable and fruit powders are strategic products for Turkey due to their long shelf life and ease of transport for sustainable food production.
As Kurucum Food, we continue to develop technologies related to dried carrot production in partnership with our sister company, Eksis Industrial Drying Systems, which is a manufacturer of drying technologies. Our projects related to dried carrot:
Carrot juice powder production
Carrot fiber production from carrot pulp
Production of carrot pulp by drying with the flash drying method, ensuring minimum loss of vitamins and beta-carotene.
