What is in the Carrot Powder Pack?

The carrot powder pack contains 5 single-use sachets of approximately 10 g each. The 5 sachets of carrot powder are sold in a single package.

Information:

During the production of dried carrots, maltodextrin (derived from starch) is added to prevent the loss of beta-carotene during the drying process. This reduces the loss of beneficial compounds that would otherwise disappear during drying.

What is Dried Carrot Powder?

Carrot powder – what it is and how it is made

  • We can answer the question of what carrot powder is as follows:
It is a product with concentrated nutritional values and a long shelf life, obtained by drying fresh carrots. The water in fresh carrots is evaporated, leaving the essence of the product. The resulting concentrated product, which has reduced water activity and bacterial growth potential, is called dried carrot. After production, the dried carrot is ground using special systems to become carrot powder.

  • What changes when fresh carrots are dried? Let's look at the ratios…

    1. Before the drying process, fresh carrots contain approximately 88% water.
    2. This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
    3. As a result of drying, the water in the fresh carrot is removed, and the carrot essence remains.
    4. With the removal of water from the product, approximately 8-10 kg of fresh carrots yield 1 kg of carrot powder.
    5. The drying process concentrates carbohydrates and protein in dried carrot, increasing its nutritional value. Note:
During the production of dried carrot, maltodextrin (derived from starch) is added during the drying process to prevent the loss of beta-carotene. This reduces the loss of beneficial compounds that would otherwise disappear during drying.

Usage Benefits

Illustration: a jar of carrot powder equals a crate of fresh produce on a scale

  • Using 8-10 kg of fresh carrots, approximately 1 kg of carrot powder is obtained, which can fit into a small jar.

  • Due to volume reduction, the space required for storage is significantly decreased. The required volume is reduced to about 1/10th compared to fresh carrots.

  • Due to the reduction in volume and weight, it has become an easy-to-transport product. A 20-ton truckload of fresh carrots can fit into a 2-pallet area once dried.

  • It does not require cold storage conditions. Keeping it in a cool, dry place away from direct sunlight is sufficient for carrot powder storage.

  • The growth rate of bacteria is proportional to the water content in dried carrot. During the drying process, the water content of fresh carrots drops from 90% to 10%, lowering water activity and limiting bacterial growth. The shelf life of the product is significantly extended compared to fresh carrots.

  • Historically, the development of dried products has often occurred during periods of famine and war. Vegetable and fruit powders are strategic products for food security due to their long shelf life and ease of transport for sustainable food production.

  • As Kurucum Food, we continue to develop technologies related to dried carrot production in partnership with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies. Our projects related to dried carrot:

  • Carrot juice powder production

  • Carrot fiber production from carrot pulp

  • Production of carrot pulp by drying with the shock drying method with minimum loss of vitamins and beta-carotene.
