What Is Garlic Powder?

Garlic powder is obtained by slicing and drying peeled fresh garlic, then grinding it. Through drying, the product loses most of its water; the remaining powder intensely carries the unique aroma of garlic.

Garlic powder is used in spice blends, instant soup and sauce production, meat and chicken marinades, sauces, and snack seasonings. It can be supplied in single-use packets or bulk purchase options.

Fresh Garlic vs. Garlic Powder Price Comparison

How Much Waste: About 5 kg of fresh product is used to obtain 1 kg of garlic powder. (The ratio may vary with the type of fresh product, drying method, moisture level and production parameters.)

Advantages of Using Garlic Powder

Garlic powder

  • Using 5 kg of fresh garlic, approximately 1 kg of garlic powder is obtained, which fits into a small jar.

  • Due to volume reduction, the space required for storage is significantly decreased. The required volume is reduced to about 1/5 compared to fresh garlic.

  • Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh garlic can fit into an area of approximately 4-5 pallets in garlic powder form.

  • It does not need to be kept in cold storage conditions. Storing it in a cool, dry, and dark place is sufficient for garlic powder storage conditions.

  • The growth rate of bacteria is proportional to the water content in dried garlic. During the drying process, the water content of fresh garlic drops from 88% to 10%, which lowers water activity and limits bacterial growth in dried garlic. Limiting bacterial growth ensures a much longer shelf life.

How to Store Garlic Powder?

Garlic powder should be stored in a cool, dry, and dark environment in its airtight packaging. Since powder products easily absorb moisture, the package must be tightly closed after each use, and the product should be taken with a dry spoon; this prevents clumping and loss of aroma.
