Leek Powder
Fresh Leek vs. Leek Powder: Price per kg Comparison
How Much Waste: About 10 kg of fresh product is used to obtain 1 kg of leek powder. (The ratio may vary with the type of fresh product, drying method, moisture level and production parameters.)
Dried product price per kg:
Advantages of Using Leek Powder
From a crate of 10 kg of leek, about 1 kg of leek powder is obtained, small enough to fit in a jar.
Because the volume is reduced, the space needed for storage is much smaller. Compared with fresh leek, the volume drops to about 1 in 10.
Thanks to the reduction in volume and weight, it becomes an easy product to transport. A truckload of fresh leek, once dried, can fit into the space of 2 pallets.
It does not need to be kept in cold conditions. A cool, dry place out of direct sunlight is enough for leek powder storage.
The growth rate of bacteria is proportional to the water content of dried leek. During drying, the water content of fresh leek falls from about 90% to about 10%, so water activity drops and bacterial growth in dried leek is limited. Limiting bacterial growth allows a much longer shelf life.
The history of dried foods is often tied to periods of scarcity and war. Because of their long shelf life and easy transport, vegetable and fruit powders are strategic products for food security and sustainable food production.
At Kurucum Food, together with our sister company, Eksis Industrial Drying Systems, a manufacturer of drying technologies, we continue to develop technologies related to dried leek production. Our projects on dried leek:

What Is Dried Leek Powder?

We can answer the question of what leek powder is as follows:
It is a product obtained by drying fresh leeks, with concentrated nutritional values and a long shelf life. The water in fresh leek is evaporated and the essence of the product remains. The resulting concentrated product, with reduced water activity and low potential for bacterial growth, is called dried leek. After production, dried leek is ground with special systems into leek powder. What changes when fresh leek is dried? Let’s look at the numbers…
- Before drying, fresh leek contains about 90% water.
- This water content is an environment in which bacteria multiply quickly, and a moisture level the product cannot withstand for long.
- During drying, the water in fresh leek is removed and the essence of the leek remains.
- With the removal of water, about 1 kg of leek powder is obtained from 10 kg of fresh leek.
- As a result, the shelf life is extended, and because the water is removed, the nutritional values in the dry product (protein, carbohydrate, minerals, fiber) become more concentrated.

How Is Leek Powder Stored?
Dried leek powder has a shelf life of at least 1 year when stored under suitable conditions. There are 3 main factors that shorten this period:
- Moisture
- Sunlight
- High temperature
To avoid shortening the shelf life, it should be kept in its own packaging in a cool, dry place away from sunlight.
