Radish Powder
What Is Dried Radish Powder?

We can answer the question of what radish powder is as follows:
It is a product obtained by drying fresh radishes, which has concentrated nutritional values and a long shelf life. The water in the fresh radish is evaporated, leaving the essence of the product. The resulting concentrated product, with reduced water activity and bacterial growth potential, is called dried radish. After production, dried radish is ground using special systems to become radish powder. What changes when fresh radish is dried? Let's look at the ratios…
- Before the drying process, fresh radish contains approximately 94% water.
- This water content is an environment suitable for rapid bacterial growth and is a moisture level at which the product cannot last for a long time.
- As a result of drying, the water in the fresh radish is removed, and the radish essence remains.
- With the removal of water from the product, approximately 1 kg of radish powder is obtained from 15 kg of fresh radish.
- As a result, the shelf life is extended, and the nutritional values (protein, carbohydrate, mineral, fiber ratio) in the dried product increase due to the removal of the essence water.

- Dried Radish Coarse Granules5-10 mm
Advantages of Using Dried Radish
Using a 11 kg crate of radish, approximately 1 kg of radish powder that can fit into a small jar is obtained.
Due to volume reduction, the space required for storage is significantly decreased. radish powder is reduced to approximately 1/15 of its volume compared to fresh radish.
Due to the reduction in volume and weight, it has become an easy-to-transport product. A truckload of fresh radish can fit into approximately 2-3 pallets in radish powder form.
It does not require cold storage conditions. Keeping it in a cool, dry, and dark area is sufficient for radish powder storage conditions.
The growth rate of bacteria is proportional to the water content in dried radish. During the drying process, the water content of fresh radish drops from 92-93% to 10%, which lowers water activity and limits bacterial growth in dried radish. Limiting bacterial growth ensures a much longer shelf life.

How to Store Dried Radish Powder?
Dried radish powder has a minimum shelf life of 1 year when stored under suitable conditions. There are 3 main factors that reduce this period:
- Humidity
- Sunlight
- High temperature
To prevent a reduction in shelf life, it should be kept in its own packaging in a cool, dry, and dark environment.
