Advantages of Using Tomato Powder
Approximately 1 kg of tomato powder, which can fit into a small jar, is obtained by using 15 kg of fresh tomatoes.
Due to volume reduction, the space required for storage is significantly decreased. Tomato powder is reduced to approximately 1/15th of the volume of fresh tomatoes.
It has become an easy-to-transport product due to weight and volume reduction. 20 tons of fresh tomatoes in tomato powder form can fit into an area of approximately 2 pallets.
It does not require cold storage conditions. Keeping it in a cool, dry place away from direct sunlight is sufficient for tomato powder storage conditions.
The growth rate of bacteria is proportional to the water content in dried tomato. During the drying process, the water content of fresh tomatoes drops from 94-95% to 10%, reducing water activity and limiting bacterial growth in the dried tomato. Limiting bacterial growth ensures a much longer shelf life.
As Kurucum Food, we continue to develop technologies related to dried tomato production in partnership with our sister company, Eksis Industrial Drying Systems, which is a manufacturer of drying technologies. Our projects related to dried tomatoes:

What is Tomato Powder?

Dried tomato powder is the ground form of the product obtained by drying fresh tomatoes. Before drying, fresh tomatoes contain approximately 95% water. Through the drying process, the water content in the fresh product is reduced to very low levels. As a result of drying, 1 kg of dried tomato powder is obtained from approximately 15 kg of tomatoes. During the drying process, the water in the fresh product is removed, leaving the essence of the product. Salt or sulfur dioxide may be added during the drying of tomatoes to prevent loss of quality and color. Therefore, the nutritional values of tomato powder, especially protein, carbohydrates, minerals, and fiber, are significantly concentrated. The sold package is produced using approximately 1000 g of fresh tomatoes.
